Made a red salad of beets, red cabbage, dill, and sauerkraut. I really wish I had mayonnaise and canned herring/sardines with this too, and it would be even better. The sauerkraut brine makes a good substitute for vinegar as a really light dressing lol

Did some more experimenting! It’s been nearly a month since I started on the two test jars of sauerkraut(front row), and just started on three more(back row). The originals have been a success! No mold, no bursting, souring with time, and no signs of going rancid. Those just had caraway as a seasoning, but these three new ones have caraway and dill. There is some color difference I can see between the test batch and this fresh batch as well. I’ll take more pics another day lol

Cabbage is kind of maligned around these parts, or at least positioned as a low to mid tier vegetable, and it’s a shame. Combined with some good seasoning and prep, cabbage is an incredible thing to eat.
Please reconsider cabbage on this fine Monday, and all that it can bring to your meals.
