
Indulge in the creamy goodness of sweet potatoes layered with rich Gruyere cheese, fragrant thyme, and rosemary. This au gratin dish is a perfect blend of comfort and elegance, ideal for any occasion.
Ingredients: 4 large sweet potatoes, thinly sliced. 2 cups Gruyere cheese, grated. 2 tablespoons fresh thyme leaves. 1 tablespoon fresh rosemary, finely chopped. 2 cups heavy cream. 3 cloves garlic, minced. Salt and pepper to taste. 2 tablespoons butter, for greasing.
Instructions: Preheat oven to 375F 190C. Grease a baking dish with butter. Layer half of the sweet potato slices in the baking dish, overlapping slightly. Sprinkle half of the grated Gruyere cheese over the sweet potatoes. Sprinkle half of the thyme leaves and half of the chopped rosemary over the cheese. Repeat the layers with the remaining sweet potato slices, Gruyere cheese, thyme, and rosemary. In a mixing bowl, whisk together the heavy cream, minced garlic, salt, and pepper. Pour the cream mixture evenly over the sweet potatoes. Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the top is golden brown and bubbly. Let cool for a few minutes before serving. Garnish with additional thyme leaves if desired.
