Préparation en 10 minutes ⬇️⬇

- Porter à ébullition le mélange sucre-vinaigre-eau-sel. (les ingrédients ci-dessous).
- Pendant ce temps, détailler finement le chou rouge en lamelles. Les mettre dans un bocal. Bien tasser.
- Ajouter des graines de coriandre, de poivre noir, des feuilles laurier (ce qu'on a sous la main).
- Verser la préparation chaude dessus. Fermer immédiatement le bocal.
- Laisser refroidir. Patienter au moins 24h avant de déguster. Conserver au frigo une fois le bocal ouvert.
- À consommer tel quel comme condiment, dans un sandwich, avec une salade….

Ingrédients à ajuster en fonction de la quantité des légumes ⬇️
- 1 dose de sucre.
- 2 doses de vinaigre.
- 3 doses d’eau.
- 1 pincée de sel.

ingredients: whole dried peppers (i like piquin peppers), table salt

recipe: add salt and peppers to your mortar. the salt will help grind the peppers into fine dust. first stamp the peppers with your pestle to break them into fragments, then grind with a circular motion. put some muscle into it.

serving suggestion: sprinkle it on any food to improve yummy. i like to dip my microwave mini tacos in it. i just put some in a sausage egg cheese croissant. it was divine.

A savory and sweet condiment, slow-roasted tomato jam is ideal for enhancing the flavor of your favorite recipes. The tomatoes’ inherent sweetness is enhanced by the slow roasting process, and the flavor combination of spices and balsamic vinegar is delightful.

Ingredients: 2 pounds ripe tomatoes, halved. ½ cup granulated sugar. ¼ cup balsamic vinegar. ¼ cup red onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon salt. ½ teaspoon black pepper. ¼ teaspoon red pepper flakes optional. 2 sprigs fresh thyme.

Instructions: Set the oven temperature to 275F/135C. Arrange the tomatoes halves cut-side up on a parchment paper-lined baking sheet. Evenly distribute the sugar on top of the tomatoes. The tomatoes should be roasted for three to four hours in a preheated oven, or until their size has decreased and their edges have caramelized. Their consistency should be jam-like and they should be soft. Roasted tomatoes, balsamic vinegar, minced garlic, red onion, salt, black pepper, and red pepper flakes if using should all be combined in a saucepan. To the mixture, add the fresh thyme sprigs. Simmer for 20 to 30 minutes, stirring now and then, over medium-low heat, or until the mixture thickens to the consistency of jam. Remove and discard the thyme sprigs. Spoon the tomato jam that has been slowly roasted into sterilized jars and close them. Before putting the jam in the refrigerator, let it cool to room temperature. Serve this tasty tomato jam as a condiment for different dishes or as an accompaniment to bread, crackers, and cheese.

This homemade red pepper jelly is a delightful combination of sweet and spicy. It’s perfect for spreading on crackers, glazing meats, or adding a kick to your favorite dishes. Make a batch and enjoy the flavors of this versatile jelly!

Ingredients: 4 cups red bell peppers, finely chopped. 1 cup jalapeo peppers, finely chopped seeds and membranes removed for less heat. 1 cup apple cider vinegar. 6 cups granulated sugar. 1 pouch 6 fluid ounces liquid fruit pectin.

Instructions: Apple cider vinegar, jalapeo peppers, and red bell peppers should all be combined in a big pot. Stirring continuously, bring the mixture to a boil over high heat. After it reaches a boil, lower the heat to medium and simmer, stirring constantly, for ten minutes. Add the granulated sugar gradually, stirring all the time. Stir until all of the sugar has dissolved. Bring the mixture back to a rolling boil after adding the liquid fruit pectin. Boil for one to two minutes, or until the jelly thickens as it cools, to the consistency you desire. After turning off the heat, remove the pot and skim any froth from the jelly’s surface. Making sure there is a ¼-inch headspace at the top of each jar, pour the hot jelly into the sterilized jars. To make sure the jars are properly sealed, seal them with lids and rings and process them in a boiling water bath for ten minutes. After taking the jars out of the water bath, allow them to reach room temperature. Make sure the jars are airtight by checking the seals; the lids shouldn’t bend when pressed in the middle. Put a label on it and keep your red pepper jelly somewhere cold and dark. It can be eaten as a condiment or stored in the refrigerator for up to three months.

Yum Yum Sauce is a smooth and tasty sauce that goes well with vegetables, seafood, sushi, and grilled meats. It makes your favorite foods taste great by adding a tangy and slightly spicy kick.

Ingredients: 1 cup mayonnaise. 3 tablespoons rice vinegar. 3 tablespoons sugar. 2 tablespoons melted butter. 1 tablespoon tomato paste. 1 teaspoon paprika. ½ teaspoon garlic powder. ¼ teaspoon cayenne pepper.

Instructions: Put rice vinegar, sugar, melted butter, tomato paste, and mayonnaise in a bowl. Spice it up with cayenne pepper, paprika, and garlic powder. Mix everything together well. Put it in the fridge for at least 30 minutes before serving so the flavors can mix.
