
These Low Carb Chicken Stroganoff Meatballs are a keto-friendly twist on the classic dish. Juicy chicken meatballs are cooked in a creamy, flavorful sauce, making them a delicious and satisfying meal for anyone following a low-carb or keto diet.
Ingredients: 1 lb ground chicken. ¼ cup almond flour. ¼ cup grated parmesan cheese. 1 large egg. 2 cloves garlic, minced. 1 tsp onion powder. ½ tsp paprika. Salt and pepper to taste. 1 tbsp olive oil. ½ cup beef broth. ½ cup sour cream. 2 tbsp cream cheese. ¼ cup chopped parsley, for garnish.
Instructions: Put almond flour, parmesan cheese, egg, minced garlic, onion powder, paprika, salt, and pepper in a bowl. Mix the ingredients together. Mix everything together well. Shape the mixture into meatballs that are about an inch across. Warm up a big pan with olive oil over medium-low heat. For about 8 to 10 minutes, or until the meatballs are browned on all sides and fully cooked, add them to the pan. Take the meatballs out of the pan and set them aside. Add beef broth to the same pan and scrape the bottom to get rid of any browned bits. Bring the heat down to low and stir in the cream cheese and sour cream. Do this for about two to three minutes, or until the mixture is smooth and warm. Put the meatballs back in the pan and cover them with the sauce. Put the meatballs on a plate with sauce and chopped parsley on top.
