These Low Carb Chicken Stroganoff Meatballs are a keto-friendly twist on the classic dish. Juicy chicken meatballs are cooked in a creamy, flavorful sauce, making them a delicious and satisfying meal for anyone following a low-carb or keto diet.

Ingredients: 1 lb ground chicken. ¼ cup almond flour. ¼ cup grated parmesan cheese. 1 large egg. 2 cloves garlic, minced. 1 tsp onion powder. ½ tsp paprika. Salt and pepper to taste. 1 tbsp olive oil. ½ cup beef broth. ½ cup sour cream. 2 tbsp cream cheese. ¼ cup chopped parsley, for garnish.

Instructions: Put almond flour, parmesan cheese, egg, minced garlic, onion powder, paprika, salt, and pepper in a bowl. Mix the ingredients together. Mix everything together well. Shape the mixture into meatballs that are about an inch across. Warm up a big pan with olive oil over medium-low heat. For about 8 to 10 minutes, or until the meatballs are browned on all sides and fully cooked, add them to the pan. Take the meatballs out of the pan and set them aside. Add beef broth to the same pan and scrape the bottom to get rid of any browned bits. Bring the heat down to low and stir in the cream cheese and sour cream. Do this for about two to three minutes, or until the mixture is smooth and warm. Put the meatballs back in the pan and cover them with the sauce. Put the meatballs on a plate with sauce and chopped parsley on top.

Cook Time: 20 minutes

Crockpot Dr. Pepper Meatballs

Cook Time: 2 hours on HIGH

Ingredients

  • 1 bag frozen meatballs
  • 1 cup barbecue sauce
  • 1 can Dr. Pepper

Instructions

Place frozen meatballs into crockpot.

Pour barbecue sauce and Dr. Pepper over meatballs and stir to coat.

Cook on HIGH for 2 hours.

Stir before serving.

Ingredients: 2 cups cooked lentils. 1 cup vital wheat gluten. ¼ cup nutritional yeast. 2 tablespoons tomato paste. 2 tablespoons soy sauce. 1 tablespoon vegan Worcestershire sauce. 1 teaspoon smoked paprika. 1 teaspoon onion powder. ½ teaspoon garlic powder. ¼ teaspoon black pepper. 2 tablespoons olive oil. 1 cup vegetable broth. ¼ cup brandy or cognac optional. 2 tablespoons vegan butter. ¼ cup chopped shallots. 2 cloves garlic, minced. ¼ cup chopped mushrooms. ¼ cup vegetable broth. ¼ cup chopped parsley. Salt and pepper to taste.

Instructions: Preheat oven to 375F 190C. In a large bowl, mix together cooked lentils, vital wheat gluten, nutritional yeast, tomato paste, soy sauce, vegan Worcestershire sauce, smoked paprika, onion powder, garlic powder, and black pepper until well combined. Form the mixture into meatballs. Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides, about 2-3 minutes per side. Transfer the meatballs to a baking dish. In the same skillet, add vegetable broth and brandy or cognac if using to deglaze, scraping up any browned bits from the bottom of the pan. Add vegan butter, shallots, garlic, and mushrooms. Cook until softened, about 3-4 minutes. Pour in vegetable broth and simmer until slightly reduced, about 5 minutes. Pour the sauce over the meatballs in the baking dish. Bake for 20-25 minutes, until meatballs are cooked through and sauce is bubbly. Garnish with chopped parsley before serving. Season with salt and pepper to taste.

Prep Time: 20 minutes

Cook Time: 45 minutes
