Enjoy a quick and delicious keto-friendly coffee cake in just two minutes. This recipe is perfect for satisfying your sweet cravings without straying from your low-carb lifestyle.

Ingredients: 2 tbsp almond flour. 1 tbsp coconut flour. 1 tbsp erythritol or preferred keto-friendly sweetener. ¼ tsp baking powder. 1 tbsp melted butter. 1 egg. ¼ tsp vanilla extract. Pinch of salt. Optional: 1 tbsp chopped nuts or sugar-free chocolate chips for topping.

Instructions: Almond flour, coconut flour, erythritol, baking powder, and salt should all be mixed in a mug that can go in the microwave. Put in the egg, vanilla extract, and melted butter. Mix everything together well. For one to two minutes, on high, until the cake is set in the middle. Let it cool down a bit before you eat it. For extra flavor, you can sprinkle chopped nuts or sugar-free chocolate chips on top before putting it in the microwave.

A delicious and keto-friendly alternative to traditional toast. These broccolitoasts are crispy on the outside and tender on the inside, making them a perfect low-carb snack or side dish.

Ingredients: 2 cups of broccoli florets. ¼ cup almond flour. ¼ cup grated Parmesan cheese. ¼ cup shredded mozzarella cheese. 1 egg. ½ tsp garlic powder. ½ tsp Italian seasoning. Salt and pepper to taste.

Instructions: Preheat your air fryer to 375F 190C. Steam the broccoli florets until they are tender, then chop them finely. In a bowl, combine the chopped broccoli, almond flour, Parmesan cheese, mozzarella cheese, egg, garlic powder, Italian seasoning, salt, and pepper. Mix well to form a dough-like mixture. Divide the mixture into equal portions and shape them into toast-like slices. Place the broccoli toasts in a single layer in the air fryer basket or tray. Air fry for 10-12 minutes or until the broccolitoasts are golden brown and crispy, flipping them halfway through cooking. Serve hot and enjoy your Go Keto Broccolitoast!

Instructions: Before you start cooking, heat the oven to 375F 190C. Put all the ingredients in a large bowl and mix them together until they are well blended. Take tablespoon-sized amounts of the mixture and roll them into balls. Put the balls on a baking sheet that has parchment paper on it. Bake for 15 to 20 minutes, or until fully cooked and golden brown. Enjoy while still warm!

Ingredients

4 potatoes finely grated large peeled
2 carrot finely grated medium
2 garlic cloves grated large
1 cup cauliflower cut into pieces
½ cup frozen peas
3 tbs plain flour
½ tsp pink salt
1/3 cup sunflower oil
½ tbs Herbes de Provence
2 tbs sunflower oil *extra


Method

Grate the potatoes and carrot into a bowl. Mix with all other ingredients, except the oil and Herbes de Provence.
Preheat the oven to 180C.
Add the oil into the 22cm x 22cm metal baking dish and add the batter. Sprinkle the Herbes de Provence on top evenly and spread with some extra oil. That helps it to turn even more crispy and golden.

Put into the oven and bake until golden brown and very crispy. That should take approx. 30-40 minutes.

Our family is going through a great deal of emotional turmoil. My father passed away at the end of November and my mom went into the hospital that same day with lung cancer and other major health issues. She stays there now until long term care opens up.

It’s a struggle to remain positive about life when grieving. I experience the grief of my father’s death and ambiguous grief as I watch my mom decline. Good days and bad days. But you know this is as good as it gets. As time passes she comes closer to death. It’s stressful.

Exercising is more important now than ever before.

“Grief can cause a variety of effects on the body including increased inflammation, joint pain, headaches, and digestive problems. It can also lower your immunity, making you more susceptible to illness. Grief also can contribute to cardiovascular problems, difficulty sleeping, and unhealthy coping mechanisms.”

One day at a time. Every day I exercise amd hunt for something to make me feel grateful and blessed.

I so grateful to be healthy and to have an incredible husband who supports both me and my family. Huge!
