Once it’s done, let the pressure drop naturally for 15 minutes and then quickly let go of the rest of the pressure. Carefully take the cheesecake out of the Instant Pot and set it aside to cool. Put it in the fridge for at least four hours or overnight. Before you serve the cheesecake, whip the heavy cream until it forms stiff peaks. Cover the top of the cheesecake with the peaks.
