Ingredients: ½ cup cornmeal. ½ cup all-purpose flour. 2 tbsp sugar. ½ tbsp baking powder. ¼ tsp salt. ½ cup non-dairy milk such as almond or soy milk. 2 tbsp vegetable oil.

Instructions: Turn on your oven and heat it up to 375F 190C. Prepare a small baking dish or two ramekins by greasing them. Put the cornmeal, flour, sugar, baking powder, and salt in a bowl and mix them together. Combine the non-dairy milk and vegetable oil with the dry ingredients. Mix it up until it’s just right. A few lumps are fine; don’t mix it too much. Fill the baking dish with the batter, or divide it evenly between the ramekins. Put it in the oven and bake for 20 to 25 minutes, or until the edges are golden brown and a toothpick stuck in the middle comes out clean. Let it cool down a bit before you serve it. Have fun with your perfect vegan cornbread!
