It really is too bad that the users in budget bytes are harping on Monti and Olena. Their recipes are great, and they add a lot of different cultural recipies, like Pollo Guisado and Kapusniak.

Monti also posted her carrot soup and soda bread recipes that impressed fucking Gordon Ramsey when she competed.

And yet certain users descend on them like vultures and it’s really annoying.

Olena gets told that the food she writes, which are versions that her Ukrainian grandma taught her, and people flock to say that «umn. Did you forget Poland, Belarus or my country. This is our food. Stop stealing our cultural dishes. Btw one feels sorry about you and your war sweetie <3»

And Monti, well, they try to be coy by saying that she spells bad, or they «take issue» with nonsense things like claiming that «most people can’t bite over brioche bread» or «humans cannot eat raw onions actually « but honestly, it’s because she is Puerto Rican.

And the thing is, Marion is not getting the same shit. Marion has been on longer than both, but is not getting the same vitriol.

Cheese Enchiladas

I woke up on Sunday craving enchiladas. They’re really easy to make from scratch (especially if you just fill them with cheese) and we had all the ingredients, so I decided that’s what I’d do for dinner.

I followed the recipe as written, including making the enchilada sauce from scratch (which is my favorite part). It made exactly a dozen and I was reminded that I should serve these sometime when we have a dinner party.

Carrot Soup

I wasn’t sure about this at first. Largely because the recipe (at least when it first went up, which is when I saw it) omitted several steps. It calls for ginger and cream but there was nothing about them in the instructions… So I had to figure it out on my own. Which isn’t really my strong spot in terms of cooking. 

Nevertheless, I persisted. 

We buy whole carrots at Costco so we had a million of them. I used half-and-half instead of cream because that’s what they had at the store I went to. I used more ginger than the receipt called for because I was making this for people who are sick with COVID and I thought the big, spicy taste would be nice.

When I was done roasting the carrots, I was afraid it wasn’t going to be enough to give the soup a strong carrot-y flavor, but I shouldn’t have worried. Also, roasted carrots are delicious. I could eat them every day. I should have roasted extras so I could nosh on them.

The brown butter infused with thyme was a nice touch. After doing that, I added the ginger with the onions. Then I followed the recipe basically as written, with the only other exception being I used two cans of broth, which was slightly more than the 3 cups called for in the recipe and accordingly used less water.

I think I ended up simmering my carrots for maybe 35 minutes? Then I added in the half-and-half and used my immersion blender (rather than transferring the soup to a real blender as the receipt called for).

After the soup was smooth, I added some salt and pepper and we were good to go. Based on the little bit I ladled into a bowl to try as a quality control measure, it was delicious. I’ll definitely be making this for myself in the near future!

One Pot Vegetarian Chili Mac and Cheese - Budget Bytes

budget bytes is almost always a runaway success, but this is great. it is CHEAP. it is FAST. it is EASY. it makes A LOT. perfect for if you know you are not going to have the time or energy or motivation to make food for yourself for a few days. the only prep work is chopping an onion and some garlic and rinsing canned beans, otherwise you are just dumping things into a pot. easy to make vegan just by omitting the shredded cheese. easy to add more vegetables to if you wanted. this made 6 HEARTY servings.

(i did add salt and a tablespoon of cumin and a teaspoon of oregano)

Limon Peppy Chucken

Thank you Beth from Budget Bytes for providing another corker of a recipe: Easy Lemon Pepper Chicken! The recipe calls for you to fillet the chicken breasts into two thinner peices, I simply put my tits between sheets of baking parchment and gave them a good old bash with a rolling pin to flatten them out.

I did not have lemon pepper seasoning so I covered them with the zest of a lemon and upped my garlic and pepper a touch. Beth mentions “you’ll want to spoon that delicious pan sauce over EVERYTHING” - while that might not be technically true, the pan sauce was bliss over some pasta and green beans.

Un-wild Rice and Vegetable Casserole

Looks fun! But was it? I’d say yeah, it’s a hearty vegetable party with a comforting creaminess. I used brown rice for this instead of wild for a penisy little health boost there. The recipe calls for ‘store bought fried onions’ - which isn’t a thing in the UK. Onion rings are though and what a casserole topper! In summation, this beige boy was pleasing on the mouth but a little dull texturally, especially the next day when the onion rings had sagged up a treat.

Splat Pack

Check out this spinch puffed pie and creamy roasted red pep pep sauce! Another Budget Bytes Bonanza! Did these go together? Maybe. Were they tasty? Of course!

I blitzed the spinach pie filling with a hand blender for extra splatness. I was slightly dubious about using cottage cheese but it works perfectly especially after being blended. 

More blitzing for the splatty sauce, I used creme fre$h instead of heavy cream because I have a deep rooted issue with buying heavy cream. I don’t think I ever have, not sure I ever will. 

Splat Pie + Splat Sauce = Splat Heaven…that’s just simple math.

An OK Budget Bytes Bonanza

We like to be thrifty wankles when we can, hence why we turn to Budget Bytes time and time again. I slapped up Spinach Rice with Feta and Yogurt Marinated Chiken and they were both OK. 

You’ll probably know by now that I’m a real salt freak - so popping a tangy feta in the rice was grand and I like the secret load of vegetables that the frozen spinch provides. The chicken was a bit boring which you wouldn’t expect from the warm spices, it was succulent - I’ll give it that.

Although this didn’t blow our socks off, Budget Bytes remains a firm fave in this house for the cheap and tasties.

Splat Pack aka  Potatoes Au Gratin

Look at this MF! It was rich and delicious, but took ages to cook…not a midweek meal…but a lot easier to put together than I anticipated. I blended my sauce for the ultimate in smooth technology. I put a bit too much nutmeg in…I always do. Ah yes and some green beans, for they are lord of the beans!
