This dish combines the crunchy texture of pan-fried catfish with the hearty tastes of white beans smothered in andouille sausage. It’s a tasty meal with Southern flavors that you can make for dinner any night of the week.

Ingredients: 4 catfish fillets. 1 cup cornmeal. 1 teaspoon paprika. 1 teaspoon garlic powder. 1 teaspoon onion powder. Salt and pepper to taste. 2 tablespoons olive oil. 1 cup diced andouille sausage. 1 onion, chopped. 2 cloves garlic, minced. 2 cans white beans, drained and rinsed. 1 cup chicken broth. 1 teaspoon dried thyme. 1 teaspoon dried oregano. 1 bay leaf. Salt and pepper to taste. Chopped parsley for garnish.

Instructions: In a shallow dish, mix cornmeal, paprika, garlic powder, onion powder, salt, and pepper. Coat catfish fillets in the cornmeal mixture, shaking off any excess. Heat olive oil in a skillet over medium heat. Pan fry catfish fillets for about 3-4 minutes on each side until golden brown and cooked through. Remove from skillet and set aside. In the same skillet, add andouille sausage, onion, and garlic. Cook until sausage is browned and onions are translucent. Stir in white beans, chicken broth, thyme, oregano, and bay leaf. Season with salt and pepper. Simmer for about 10 minutes until flavors are well combined and beans are heated through, adding more chicken broth if necessary to reach desired consistency. Serve the pan fried catfish over the andouille smothered white beans, garnished with chopped parsley.

Prep Time: 15 minutes

Cook Time: 20 minutes

These old-fashioned stewed potatoes are a classic Southern comfort food, perfect for any meal. They’re simple to make and packed with flavor.

Ingredients: 4 large potatoes, peeled and cubed. ½ cup chopped onion. 2 tablespoons butter. 1 cup water. Salt and pepper to taste.

Instructions: Melt the butter in a big pan over medium-low heat. Put in the chopped onion and cook it until it turns clear. Put the cubed potatoes in the pan and mix them around to cover them with butter. Add water to the potatoes and cook them until they’re almost done. Cover and cook, stirring every now and then, for 20 to 25 minutes, or until potatoes are soft. Add pepper and salt to taste. Serve hot as a side dish to warm you up.

Prep Time: 10 minutes

Cook Time: 25 minutes

Savor the genuine flavors of Memphis with these smoked ribs that have a hint of sweetness and a well-balanced spice blend.

Ingredients: 2 racks of baby back ribs. ¼ cup paprika. 2 tablespoons dark brown sugar. 2 tablespoons salt. 1 tablespoon black pepper. 1 tablespoon white pepper. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 teaspoon cayenne pepper. 1 teaspoon dried thyme. 1 teaspoon dried oregano.

Instructions: To improve the penetration of the seasoning, remove the membrane from the back of the ribs. To make the rub, combine the paprika, cayenne pepper, dried thyme, dried oregano, dark brown sugar, salt, black pepper, white pepper, garlic powder, onion powder, and cayenne. Make sure the ribs are evenly coated by liberally rubbing the mixture on both sides. To let the flavors meld, let the ribs sit at room temperature for half an hour. Set the temperature of your smoker to 225F 107C. After the ribs are placed in the smoker, cook them for about five hours, or until the internal temperature reaches 190F 88C. For the final hour of smoking, cover the ribs with foil to increase their tenderness. After cooking, give the ribs ten minutes to rest before slicing and serving.

Prep Time: 15 minutes

Cook Time: 300 minutes
