This Paleo Sweet Potato Hash is a nutrient-rich dish packed with fiber, vitamins, and antioxidants. It’s perfect for those following a Paleo diet and looking to support their autoimmune health.

Ingredients: 2 medium sweet potatoes, peeled and diced. 1 onion, diced. 2 cloves garlic, minced. 1 red bell pepper, diced. 1 tablespoon coconut oil. 1 teaspoon paprika. ½ teaspoon cumin. Salt and pepper to taste. Fresh parsley for garnish optional.

Instructions: Heat coconut oil in a skillet over medium heat. Add diced sweet potatoes and cook until they start to soften, about 5 minutes. Add diced onion, minced garlic, and diced red bell pepper to the skillet. Cook until vegetables are tender, about 5-7 minutes. Sprinkle paprika, cumin, salt, and pepper over the hash. She was a neighbour of sorts our children are of similiar ages. She was a friend and later colleagues I seemed to follow her lol then we did our NVQ together..

This was the day my granddaughter Brooke was born and we were on a weekend away with a bunch of us friends. Not even thinking my baby should go into labour earlier than expected. But the call came both my daughter and her daughter was healthy and mass of hair and big eyes just like her mother and white blonde hair. So this was a celebration 🎉 😎w

Off the Boat…

I’ve been preparing protein shakes each morning using collagen and a vitamin/protein mix I get from my naturopath. Each serving gives me about 25 grams of protein and the vitamins and amino acids I need for the day. I put a few frozen berries in it for flavor. I’ve premeasured and prepackaged the berries to make sure I’m staying carb aware.

Week 1 of Autoimmune Paleo Plan

Happy Monday! 

This morning I started my day off with water upon waking and then coffee with a tablespoon of grass-fed butter (yum)! The buttered coffee helps me reach my macro goals for fat consumption and is a brain power booster. Unfortunately, I will have to wean myself back off of the coffee because its not included in an AIP diet. There are other items I’ll be slowly eliminating such as nightshades and cutting back on nuts. Right now I still have Roma tomatoes left and almonds so I’ll consume them until they are gone. You see an avocado in this photo because they are a daily constant and my main source of healthy fat. A third of my daily calories come from avocados.

Since January 2019 I’ve keep an regimen of walking at least 3 miles a day to exercise, relax/de-stress, and reduce inflammation. 

Its free and simple - just get on your feet and place one foot in front of the other, over and over!

So I see my third new doctor in 6 months. I’m new to the spooning life so I don’t knowing if this is normal or what 🤷🏽‍♀️.

Questions I want to ask that my other two doctors danced around like Chris Brown in the 00’s:

Am I dying? Cuuuuuuuuz no one seems to be able to answer that. All the research I’ve done says I’m going to kick the bucket in like 20 years so 👀👀 whose going to tell me? And none of this “let’s be optimistic.” No optimism if I need to start like preparing.

Can I have kids? Cuz again all the medication I’m taking, most of them say “you can’t get tf pregnant” and not saying that I DO but I WANT THE OPTION yah know? Plus the other medication doesn’t work for me and they say I’ll go into liver failure if I stop taking it soooooooo that’s a yes???

So is this pain normal or does it mean the 11 pills I take daily ARENT working orrrrrrr??? Cuz I’m a teacher and a damn good one at that because I could work 80-90 hour work weeks, and that doesn’t include grading. Now, it’s like if I’m knocked out for two days because I can’t eat and I feel like death, does this mean I eventually can’t do the thing I’ve dedicated my life to? I re-fucking-fuse.

In conclusion, I rather post this shit on the internet because if I tell my people they make The Face™️ and go like this for 20 minutes.

So until I know, I’m just going to post my anxiety for a bunch of strangers to feel enough validation until I have some confirmed answers 😅😅😅.

Someone asked me today “what is an auto immune disorder?” and that is a great question - so I wanted to share a bit of information with you here not only about what an auto immune disorder is but specifically about my auto immune disorder. There are 100′s of varying types of auto immune disorders (also sometimes called auto immune disease(s)) - I have ANCA Vasculitis - 

What is autoimmune disease?

The immune system’s job is to defend the body from infections or germs. White blood cells are a major part of the immune system. It can be helpful to think of them as the soldiers of the immune system. When the immune system recognizes something foreign (like germs that cause infection), white blood cells attach to and attack the invaders. White blood cells cause swelling and inflammation as they try to kill the invaders.Autoimmune disease is what happens when the body’s immune system attacks the body itself, rather than attacking an infection or foreign invader. “Auto” = self, so autoimmune means the immune system is attacking the body itself.There are many different kinds of autoimmune diseases. Depending on what kind of cell or part of the body the immune system attacks, different problems and symptoms can occur. Some examples of autoimmune disease include lupus, Crohn’s disease, and rheumatoid arthritis.

The immune system makes antibodies to help prevent or fight infection. Antibodies recognize and attach to something (like bacteria or germs) to help the immune system find it and attack it- sort of like marking or tagging it. Normally antibodies are made which recognize germs and invaders (things foreign to the body). However, sometimes the body can make antibodies that recognize and attach to someone’s own cells or tissues. These are called autoantibodies (auto = self, so autoantibody = antibody to something in oneself). Different kind of autoantibodies are involved in different autoimmune diseases. Since autoantibodies can recognize or target different things, how an autoimmune disease works and what symptoms it causes depend on what the autoantibody targets.


What is ANCA vasculitis? ANCA vasculitis is an autoimmune disease affecting small blood vessels in the body. It is caused by autoantibodies called ANCAs, or Anti-Neutrophilic Cytoplasmic Autoantibodies. ANCAs target and attack a certain kind of white blood cells called neutrophils. They target a part of neutrophils called the cytoplasm (the inside of the cell.)When ANCAs (the autoantibodies) attach to neutrophils, it makes the neutrophils attack small blood vessels in the body. This is how vasculitis (inflammation in blood vessels) happens in this disease. ANCAs cause neutrophils (a type of white blood cell) to attack small blood vessels, and the blood vessels become swollen and inflamed. Most people do not have these ANCAs (autoantibodies that attack small blood vessels).ANCA vasculitis can cause different symptoms depending on what organ or part of the body that is involved. For example, when blood vessels in the skin are affected, it can cause a rash. When blood vessels in the kidney are affected, it can cause blood and protein to leak into the urine, as well as kidney damage (kidney function gets worse). Many of the different symptoms that can be caused when different body parts are involved are listed later. Not all small blood vessels in the body get attacked. We don’t yet know why some organs/parts are affected in some people with ANCA vasculitis and different ones are affected in other people.”

So, ive been having lots of weird pain and stuff going on with my body, so has my sister.

My mom has like 3 different autoimmune disorders (rheumatoid arthritis, sjorgens something or another, and an undifferentiated disorder). One of her sisters has been having symptoms and iirc her grandma had an autoimmine disorder. We found out last week that my paternal greatgrandma died from an autoimmune disorder and my mom was like “You two have to go get checked out ASAP”.

So, i go to the doctor yesterday. On paper, we’re all generally healthy. No diabetes, no heart issues, low blood pressure, etc etc. Outside of out shitty mental health and uteri, we’re fine. Except we’re “overweight”. I think technically obese

For 20 years, doctors kept telling my mom “Youre fine” or that all her health issues were weight related.

Thankfully, so far, he doctors Ive had have listened to me about my issues and haven’t blamed it on my weight, thought far too many bring up my weight and weight loss unprompted.
