Almond / Rum Mug Cake

All-purpose Flour - 4 Tablespoons / 31g
Granulated Sugar - 3 Tablespoons / 38g
Baking Powder - ½ Teaspoon / 2.5g
Milk - 3 Tablespoons / 44ml
Oil - 1 Tablespoon / 15ml
Vanilla Extract - 1 Teaspoon / 5ml
Almond Extract - 1 Teaspoon / 5ml
Rum Extract - 1 Teaspoon / 5ml

Mix all ingredients together in a 12oz mug or bigger.
Microwave for 90 seconds - 2 minutes.
Let cool before enjoying

Tropical Itch

Another bourbon-based tiki drink, which have historically been a huge success for me in the past. This one has a split rum base!

  • 1 oz bourbon (Wild Turkey 101)
  • ¾ oz Jamaican rum (Doctor Bird)
  • ½ oz Demerara 151 (subbed Plantation OFTD)
  • ¾ oz pineapple juice (Trader Joe’s cold pressed)
  • ½ oz lemon juice (fresh)
  • ½ oz passion fruit puree (subbed Portland Syrups Passion Fruit Syrup)
  • ½ oz demerara syrup (Liber & Co.)
  • 2 dashes bitters (Bittermens ‘Elemakule Tiki Bitters)

Shake all ingredients but overproof and bitters on ice, strain into glass with ice. Float overproof, dash bitters.


Honestly not sure the float accomplishes much, if anything, here, but once it’s over with the remaining drink is fruity and delicious. The use of passion fruit syrup instead of puree likely made mine a touch sweeter, but I’m certainly not complaining.

Tradewinds

This is one I could’ve sworn I’d done here before, but that seems not to be the case. A rum drink with a healthy serving of apricot brandy, doesn’t take anything more than that to get me on board.

  • 1 oz gold rum (Mt. Gay Eclipse)
  • 1 oz dark rum (El Dorado 15)
  • 1 oz apricot liqueur (Giffard Abricot)
  • 1 oz cream of coconut (Coco Real)
  • 1 oz lemon juice (fresh)

Build in glass, stir, fill with crushed ice.


These are words I’d never thought I’d say, but too much apricot brandy in this one. It overwhelms everything pretty seriously, and you just end up with apricot and muddled other flavors. Not bad by any means, but fairly underwhelming.
