Boba is deceptively hard to get right imo. I’ve made it a bunch of times before and it never hits quite right compared to most boba places. I mean maybe I’ll get better at it but still. Anyway, the most important qualities (to me) of really good boba are:

  • good texture: it can’t be too soft/squishy because then it doesn’t have any give when you chew it, but it also can’t be too hard because then you won’t be able to chew it at all
  • good size: I’d prefer boba to be around the same size as or slightly bigger than the boba straw’s hole, because then it feels better to chew on than smaller boba
  • good base flavor: I need to actually be able to taste the brown sugar/honey they used to flavor the boba–you’d think this would be obvious but I’ve had boba before that tasted like literally nothing
  • good flavor absorption and retention: it needs to retain the flavor of the honey/brown sugar the entire time you’re drinking it (poorly-made boba can lose its flavor over time), and it should also be able to absorb the flavors of whatever drink it’s in–sweet, fruity, doesn’t matter. The only exception to this is coffee, because coffee literally sucks out all of the flavor from the boba and is therefore a forbidden boba drink option

My problem is that I struggle a lot with texture and flavor absorption & retention–you can solve the latter by letting the boba marinate for long enough, which boba places can execute more easily since their boba is literally sitting in a big pot/container all day. Texture you can kind of circumvent by letting the boba sit in the iced drink you serve it with, but if you fail at flavor absorption & retention, the drink will just wash away the flavor of the brown sugar/honey.

Obviously I haven’t been to every boba place ever, but I’ve had boba from a good amount of the places where I live, so here’s how I’d rank some of them:

  • Wushiland Boba: 10/10, favorite boba place. Meets all four qualities of good boba, and they always give you a lot of it with every drink. The price of their drinks and boba is also the cheapest of all the places I’m going to list.
  • 7 Leaves Cafe: 9/10, second favorite boba place. Their boba is also great and meets all four qualities, and it tastes particularly good when it absorbs the flavor of sweeter drinks like their red and green Thai iced teas.
  • Island Vintage Coffee: 9/10, best and only boba place I went to when I went to Hawaii with my family. Their boba is awesome, hits all four qualities, they give you a lot and it’s reasonably priced. My favorite drink from there was My Lilikoi Drink, and honestly my only knock against it is, well…it’s all the way in Hawaii XD
  • Otto Tea Shoppe: 8/10, they have a good variety of drinks without being overwhelming. but I will say their boba doesn’t absorb the flavor of the drink it’s in, even though it retains the brown sugar really well.
  • Amai Tea & Coffee: 6/10, they used to be an 8/10 for me since they have boba that hits all four qualities, but then they started phasing out a lot of their good drinks–for some reason they stopped selling Thai iced tea, one of the most popular and go-to drinks at literally any boba place??–in favor of introducing more matcha drinks and drinks that are trendier and more cosmopolitan. Also. Their drinks are so fucking overpriced now.

Anyway yeah. Boba good. Very hard to make. I want to get better at it tho. I made sago a couple times, and it’s a bit easier but it’s so fucking time-consuming. Thanks for coming to my TED Talk, everyone XD
