For anyone out there struggling with Diabetes and depression from not being able to eat pasta (🙋🏼‍♂️ Hi, it’s me. I’m anyone). After seeing a post from a friend regarding refrigerating pasta for 24 hours before consuming, it’ll hit your blood sugar slower and you won’t have a spike (plus PASTA!). I did some looking and discovered Starch Retrogradation is a thing.

And, this is anecdotal, but I’ve tried it for the last week (I made a whole box of spaghetti noodles last weekend) and have been eating pasta every night this week (don’t judge me, I haven’t been able to do this in a year) and hallelujah! My blood sugar hasn’t been over 180 all week, which is amazing for me, but my experience is subjective

The reason I’m posting this and the article, is so other people can know about it and maybe give it a try.
