Ingredients: 1 small red cabbage, thinly sliced. 2 apples, thinly sliced. 200g speck or bacon, diced. 1 teaspoon caraway seeds. ¼ cup apple cider vinegar. 2 tablespoons olive oil. 1 tablespoon honey. Salt and pepper to taste. Fresh parsley leaves for garnish.
Instructions: In a large bowl, combine the thinly sliced red cabbage and apples. In a skillet over medium heat, cook the diced speck or bacon until crispy. Remove from the skillet and set aside. In the same skillet, add caraway seeds and toast for about 2 minutes until fragrant. Whisk together apple cider vinegar, olive oil, honey, and toasted caraway seeds to make the dressing.
