Ingredients: 2 ripe bananas. 1 cup gluten-free rolled oats. 2 eggs. ½ teaspoon gluten-free baking powder. ½ teaspoon vanilla extract. ¼ teaspoon cinnamon. ¼ cup almond milk. 1 tablespoon honey optional. Fresh berries and maple syrup for topping.

Instructions: Put the rolled oats, eggs, baking powder, vanilla extract, cinnamon, almond milk, and honey if you want into a blender. As you blend, keep going until the mixture is smooth, like pancake batter. Place a nonstick griddle or skillet over medium-high heat and lightly coat it with oil or cooking spray. To make pancakes, pour a ladleful of the batter onto the pan. Cook for two to three minutes, or until bubbles appear on top. Flip and cook for one to two more minutes, or until golden brown. Take the pancakes out of the pan and do it again with the rest of the batter. Add some fresh berries and maple syrup to the pancakes with banana and oats. Enjoy your tasty gluten-free breakfast!
