Frito Corn Salad is a delicious and easy-to-make side dish that combines the flavors of sweet corn, colorful bell peppers, and the crunch of Fritos corn chips. Creamy and slightly tangy dressing ties it all together for a perfect potluck or BBQ addition.

Ingredients: 2 cans 15 oz each whole kernel corn, drained. 1 cup diced red bell pepper. 1 cup diced green bell pepper. ½ cup diced red onion. 1 cup mayonnaise. 1 cup sour cream. 1 bag 10.25 oz Fritos corn chips. 2 cups shredded cheddar cheese. ½ teaspoon chili powder. ½ teaspoon garlic powder. Salt and pepper to taste. Fresh cilantro for garnish optional.

Instructions: Put the drained corn, diced red bell pepper, diced green bell pepper, and diced red onion in a large bowl. Mix the mayonnaise, sour cream, chili powder, garlic powder, salt, and pepper in a different bowl until everything is well mixed. The mayonnaise mixture should be poured over the corn and vegetable mix, and it should be gently stirred to cover everything. Add the Fritos corn chips and shredded cheddar cheese to the salad right before you serve it. Carefully toss to mix, making sure the chips stay a little crunchy. If you want, you can add fresh cilantro as a garnish. Serve right away and enjoy!
