This flavor-filled, quick, and simple-to-make stir-fry of chicken and vegetables is ideal for a weeknight meal.
Ingredients: 2 boneless, skinless chicken breasts, thinly sliced. 2 cups broccoli florets. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 carrot, thinly sliced. ½ cup snap peas. 2 cloves garlic, minced. 1 tablespoon ginger, minced. 2 tablespoons soy sauce. 1 tablespoon oyster sauce. 1 teaspoon sesame oil. 2 tablespoons vegetable oil. Salt and pepper to taste.
Instructions: Mix the oyster sauce, sesame oil, and soy sauce in a small bowl. Put aside. In a large skillet or wok, heat the vegetable oil over high heat. Stir-fry the ginger and garlic for 30 seconds or until aromatic. When the chicken slices are no longer pink in the middle and have turned white, add them and cook. Take out and place aside from the skillet. If necessary, add extra oil to the same skillet and add all the vegetables. Stir-fry for three to four minutes, or until they are crisp but just a little bit tender. After the chicken has finished cooking, add the vegetables and sauce to the skillet. Stir-fry for a further two to three minutes, or until everything is thoroughly heated and covered with sauce. To taste, add salt and pepper for seasoning. Serve hot atop noodles or cooked rice.

…with some body provided by the mung bean sprouts, grated carrot, thin sliced radishes, fine grated ginger, sesame seeds, and a few seaweed squares to top it off. This fixes in about the time it takes to boil some water…pssst I swear the water heats faster in my electric tea kettle but see for yourself. Look for the miso soup with no alcohol - it exists you just have to read the fine print in the “Ingredients” section on the label. Here’s the recipe for a light meal, fixed fast with no regrets after…
½ c. miso soup paste
3 c. boiling water
1 ½ c. mung bean sprouts
1 carrot, coarsely grated
1 c. radishes, sliced super thin
2 t. fresh ginger, grated fine
dash sesame seeds
10 - 15 1/2″ size seaweed squares
In a sauce pan, add miso soup and water stirring until the miso soup paste is dissolved. Add the mung bean sprouts, carrot, radishes, and ginger cooking just a few minutes until the bean sprouts are tender. Transfer to a deep bowl, top off with sesame seeds and seaweed…dig in….

I’ve been focusing on ¾ veggies and ¼ protein for dinner. It’s becoming a creative project. Tonight was the first time I tried #pastazero #shiitakemushroompasta with broccoli, tofu, Thai almond sauce, coconut aminos (instead of soy sauce), siracha, pepper, garlic, onion. Pretty good dinner. #vegan #easyveganmeal #fastdinner #whatveganseat #savory #satisfying
We are starting a new segment: spot the t-Rex 🦖, as side entertainment to what really matters: the food. We tried two new techniques with this salmon: First, we filled a baking pan with a thin layer of water and placed the salmon elevated on top of a plate inside. The water left the salmon super juicy, as if we had cooked it sous vide. We broiled it on high for 10 mins and done! Super fast, super easy dinner.
