Olive Garden Zuppa Toscana
Ingredients:
- 1 lb italian sausage (mild)
- 1 medium onion, chopped onion
- ~5 cloves garlic
- 2 teaspoons italian seasoning
- 1 teaspoon salt
- 1 teaspoon black pepper
- SMALL PINCH red pepper flakes
- 3 cups low sodium chicken broth + 2 cups water
- 2 cups chopped kale
- 2 large potatoes (~1.5 lbs)
- 3/4cup cream or half n half (depending on how thick)
Garnishes: parmesan, bacon crumbles, crusty bread
Instructions:
- Brown italian sausage. No need to add oil. (4 minutes)
- Add chopped onion. Cook until translucent.
- Add garlic and spices. Cook ~ 1 minute.
- Add potatoes. Cook ~ 3 min.
- Add broth. Bring to a simmer over medium-high, then reduce to medium-low. Cook until potatoes tender (10-12 min).
- Stir in kale, cook ~ 3 min just until wilted.
- Turn off heat. Add cream and parmesan.
Notes:
10/19/2023 - Really good basic recipe that uses few ingredients (had a bunch of kale) and is solid, especially for fall/winter. Would add bacon bits for garnish. Goes good with bread. Definitely a regular since italian sausage goes on sale a lot. Went really heavy handed on the pepper, need to go lighter next time.
