I love a dosa/thosai masala for a light meal, and this morning I got to try the onion dosa masala at Bay Leaf in PJ State. It’s light and medium hearty, the masala had a nice kick, and the chopped red onion added a lovely texture and flavour. I might have to ask to add onion in my dosa masalas in the future. Indian dosa is a popular South Indian dish made from fermented rice and urad dal batter. It’s a thin, crispy pancake often served with coconut chutney and sambar.
Ingredients: 1 cup rice. ½ cup urad dal black gram. ¼ cup fenugreek seeds. Salt to taste. Oil for cooking.
Instructions: Wash and soak rice, urad dal, and fenugreek seeds separately in water for 4-6 hours. Grind the soaked rice and fenugreek seeds into a smooth batter. Grind the soaked urad dal into a smooth and fluffy batter. Mix both batters together, add salt, and allow the dosa batter to ferment overnight. Heat a non-stick griddle or dosa pan and grease it with oil. Pour a ladleful of dosa batter onto the hot griddle and spread it thinly in a circular motion to make a thin dosa. Drizzle some oil around the edges and cook until the dosa turns golden brown and crisp. Fold the dosa in half or roll it up and serve hot with chutney and sambar.
