Savor the ideal balance of sweetness and saltiness by biting into these delicious Salted Caramel Buttercream Macarons. Rich and creamy caramel buttercream fills the delicate almond shells, creating an amazing treat that will wow.
Ingredients: 150g almond flour. 150g powdered sugar. 55g egg whites aged. 150g granulated sugar. 40g water. 55g egg whites fresh. 150g unsalted butter. ½ cup caramel sauce. ½ tsp sea salt. ½ tsp vanilla extract.
Instructions: In a bowl, sift together powdered sugar and almond flour. Put aside. Add water and granulated sugar to a saucepan. Simmer on medium heat until the temperature reaches 118C 244F. Begin whipping the aged egg whites until stiff peaks form while the sugar syrup is heating. When the sugar syrup is at the right temperature, gradually add it to the egg whites that have been whisked until the meringue cools to room temperature. Beat the fresh egg whites in a different bowl until stiff peaks form. The almond flour mixture should be gently folded into the meringue until a smooth, glossy batter is formed. When the mixture is smooth and flows like lava, add the whisked egg whites and fold in. Spoon the batter into a piping bag with a round tip, and pipe tiny circles onto a parchment paper-lined baking sheet. After removing any air bubbles by tapping the baking sheet against the counter, allow the macarons to rest for 30 to 60 minutes or until a dry skin forms. Set the oven temperature to 160C 320F. Bake for 12 to 15 minutes, or until the macarons are risen and have feet. Before removing, allow them to cool completely on the baking sheet. To make the salted caramel buttercream, cream the unsalted butter and mix in the sea salt, vanilla extract, and caramel sauce. Beat until thoroughly mixed. Spoon half of the macarons with the salted caramel buttercream, then top with the other half. To allow the flavors to mingle, refrigerate for a minimum of 24 hours prior to serving. Savor your mouthwatering Buttercream Salted Caramel Macarons!
