This vibrant pasta dish celebrates the freshness of spring with blistered cherry tomatoes and fragrant basil. It’s a simple yet flavorful recipe that’s perfect for a quick weeknight dinner or a leisurely weekend meal.
Ingredients: 8 oz linguine pasta. 2 cups cherry tomatoes. 3 cloves garlic, minced. ¼ cup extra virgin olive oil. Salt and pepper to taste. ¼ cup fresh basil leaves, torn. Grated Parmesan cheese for serving.
Instructions: Follow the directions on the package to cook the linguine until it is al dente. Drain the pasta and set it aside, but save some of the water. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook for about one minute, until the garlic smells good. Add the cherry tomatoes to the pan and stir them around a few times a while. Cook for about 5 to 7 minutes, or until they start to blister and burst. For a tasty tomato sauce, add salt and pepper to taste. Put cooked linguine and torn basil leaves into the pan. Mix it all together, and if the sauce gets too thick, add the pasta water that you saved. Take it off the heat and serve right away with grated Parmesan cheese on top.
