Sometimes it’s pretty obvious what primary and secondary category you should choose for your app. If so, make sure Apple will agree with you since they have to approve it.  

2. So if you do, how do you choose between two or more?

It will be easier to rank higher on a less competitive category - so if you’re deciding between two, pick that one. 

3. How do you decide which is less competitive?

If you check out the leaderboard, look at the estimated worth of the top apps and compare. The smaller the estimated app worth, the easier it will be to reach Apple’s top charts.
