okay fiiiine you’ve all convinced me to watch the frankenstein movie because no one will shut up about it!! so here we go!!
trying to hit my reading goal of 1 book/week this year. I’ve got to 38 books but we’re on week 47 of 2025 so I’m still behind aaarrrghhh
don’t order that crappy lukewarm delivery!
1. avocado, cut in half and toss the pit. slice criss-cross, squeeze lime juice over it and salt. eat from the rind with a spoon.
2. boiled egg mashed on toast, add olive oil and pepper flakes.
3. berries. just a big bowl of ‘em. maybe add cottage cheese/yogurt.
4. apple cut up w peanut butter or string cheese.
5. sweet potato. stab with fork, coat with butter. cook 40 min at 400F. slice it open, put cinnamon and more butter inside. mmm :)
6. regular potato. stab with fork, coat with butter. cook 40 min at 400F. slice it open, put sour cream/cheese/anything you like.
7. chickpeas. wash, dry, toss in olive oil and salt. add hot sauce or spice or even honey to taste. bake 40 min at 400F. crunchy snack!
8. hummus as a dip for anything you want.
9. baked beans. I wont lie I eat them plain. Also goes well on toast.
10. DIY charcuterie. get a bowl and toss pre-sliced cheeses in with some crackers, olives, grapes, anything else you find in the kitchen.
11. pickle. right out the jar. fuck yeah.
12. pasta. 1 cup, salt water, boil 10 minutes, strain. I like to add butter with cracked pepper and pepper flakes to mine. you could add pesto. or olive oil and parmesan. or shredded cheese. as you please.
13. broccoli or green beans. olive oil. garlic. cook. kaboom, veggies.
14. boxed mac n cheese. when the boiling water has 3-4 minutes left, toss in some broccoli too. cheesy mac with veggies!
15. quesadilla. tortilla and cheese, low heat, 1 pan, done. you can always add more things to it but sometimes cheese is all I can do.
16. brown rice (microwavable is easiest) with feta cheese mixed in.
17. frozen bag of mixed veggies. heat up. add butter, salt, pepper.
18. canned chili, sour cream and cheese on top.
19. canned tomato soup. cheese on top.
20. fairy bread! make toast. put butter. put sugar. enjoy.
21. bread with peanut butter and honey. toasted or not, both good.
22. mason jars. 1 cup oats. add 1 cup of your favorite milk. add fruit or seeds if you want. leave it in the fridge overnight. overnight oats.
23. grapes. literally just grapes. always have grapes. they’re amazing. cold little munchable juicy treats. always make me feel better. sometimes I freeze them. I always feed them to myself from the vine dramatically like a greek goddess being worshiped by her peons.
24. couscous. add 1 cup dry to your bowl. add 1 cup boiling water to bowl. cover and wait. yummy and leaves 1 dish to wash.
25. frozen edamame. boil, strain, dip in soy sauce.
26. can of sweet corn. halve some small tomatoes. feta. salt, pepper, olive oil. toss. keep in a bowl in the fridge for a nice pre-made salad. you can add things like green onion, cucumber, and watermelon too.
27. popcorn. this is my go-to. not the microwave kind, buy the raw kernels. add a little vegetable oil to the bottom of a pot, just enough until it coats it. heat on medium-high heat. add kernels until they also coat the bottom. put the pot lid back on. have a bowl ready. I like to add salt to mine but some people prefer sugar or butter.
I pair a lot of these and make it a 1 meal/day kind of situation. tomato soup and quesadilla. baked beans with baked sweet potato. a few rounds of toast with snacks. that’s the day for me.
last tip. a lot of food rules are made up and make things harder. eat off of a napkin. breakfast food is for always. you don’t have to cut up veggies. you can eat a cucumber like a banana, and a bell pepper like an apple. I eat kiwis with the skin still on. I’ve smashed a watermelon on the counter to scoop out its guts with a spoon like a rabid animal. eating doesn’t have to be amazing or pretty, it just has to happen :)
