Technique is everything - second batch of popovers from Michael Ruhlman’s Ratio. Serve with roast beef, salmon, or sprinkle with butter and sugar and have them for breakfast. We made whole bins of these at Hotel X to serve with Prime rib. Nothing could be simpler than a slack batter of milk, eggs, and flour. The trick is how you put it all together.
