
A comforting and flavorful chicken noodle soup with the added warmth of ginger. Perfect for chilly days or when you need a comforting bowl of goodness.
Ingredients: 1 lb boneless, skinless chicken breasts, thinly sliced. 8 cups chicken broth. 2 cups water. 1 cup sliced shiitake mushrooms. 1 cup sliced carrots. 1 cup sliced bok choy. ½ cup sliced green onions. 3 cloves garlic, minced. 2 tablespoons fresh ginger, grated. ¼ cup soy sauce. 2 tablespoons sesame oil. 8 oz rice noodles. Salt and pepper to taste.
Instructions: In a large pot, combine chicken broth, water, soy sauce, garlic, and ginger. Bring to a boil. Add sliced chicken to the boiling broth and cook until no longer pink, about 5 minutes. Stir in shiitake mushrooms, carrots, and rice noodles. Cook until the noodles are tender, following package instructions. Add bok choy and green onions, simmer for an additional 2-3 minutes. Season with salt and pepper to taste. Drizzle with sesame oil. Serve hot, garnished with extra green onions if desired.
