Really wanna eat some borscht right now

Mom makes a huge crockpot of borscht. I eat some.
Me: “Mmmm, that’s good, I like it!”
Mom: “Good, you can have it. I think it tastes like barf.”
I was trying to find a single serving recipe for borscht but for some reason every recipe that claimed to be one serving either wanted 2+ beets or a pound of meat. Like that’s a lot of one ingredient for a one serving multi-ingredient recipe

I made borscht! It’s fairly nice. It’s a relatively standard recipe (grated beets, carrots, onion, bit of garlic, some tomatoes, pork shoulder) but I made some changes. Mainly ommitting cabbage/sauerkraut because Bad Texture, using lemon for some acid, and eating it on a bed of boiled potatoes. The potato being cooked separately is very important for texture, the pork is tender (my Russian friend says her grandmother uses pork more often than beef), and the sour cream is nice.
Soup.
On my period, cramping and cranky. And what do I have to eat for lunch this week?
Borscht.

Bright red beet soup.
The look of it bothers my hubby. I think it’ll make a great food prop for cannibals eating people in films. Either way, this bleeding menstruating gal is going to get her borscht and consider harvesting her blood for paintings. Maybe a summoning circle? Who knows!
At the suggestion of my long distance partner (C♏) I made Borscht last night! It was delicious! Which is surprising because I definitely don’t like beets. But I personally couldn’t taste them. My nesting partner (P♎) however, was not a fan :/ he said he could taste the beets more prominently.
I’ll bring some over to D♑ and A♈ because they wanted to try some ☺️ and we DEFINITELY have left overs lol

*soup stock of beef bones, onions, garlic, herbs* aw man this stock doesn’t taste great. Tomorrow I’ll add some of that yu choy I haven’t tried before and some pork dumplings.

Maybe it needs some more umami? and salt?
*adds soy sauce* Okay it’s edible now but tastes like McDonald’s for some reason. And the dumplings are undercooked.

A lime might make it more like pho but this is really not like pho and I don’t have a lime. I’m going to bed. *soup goes in fridge*
I’m not looking forward to this but I have no other food in the house and I made so much.
