Ingredients:
- 1 cup red lentils
- 4 cups vegetable broth or water
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh parsley for garnish

Directions:
1. Start by rinsing the red lentils under cold water, then set them aside for a moment.
2. In a large pot, heat a splash of olive oil and sauté the diced onion, minced garlic, carrot, and celery until they become nice and soft. The aroma will be delightful!
3. Stir in the cumin and coriander, letting them cook for another minute to release their fragrant flavors.
4. Now, add the rinsed lentils along with the vegetable broth or water. Bring the whole mixture to a boil, then lower the heat and let it simmer for about 20-25 minutes until the lentils are tender.
5. If you prefer a creamy soup, feel free to blend it until smooth, or you can leave it as is for a heartier texture.
6. Season with salt, pepper, and a generous squeeze of lemon juice to brighten up those flavors!
7. Serve hot, garnished with fresh parsley, and enjoy this delicious bowl of goodness!

Taco Muffins (for leftover taco meat)

Notes: We use beef hamburger for our tacos, I don’t know if this works with other forms of protein. Please make sure the meat is COOKED. (You’d think saying left over would imply that but it doesn’t I guess.)

Other notes: I’ve only made this once so far because it was a Boxing Day experiment thing & also I don’t really write shit down as I’m doing it I just look at it so I can’t guarantee it will work but if it does these are SO GOOD!

THE RECIPE

1 cup all-purpose flour

1.5 cups baking powder (Yes it’s a lot please trust the floof)

¼ tsp salt

1 Tbsp butter

Sift flour into a bowl. Add baking powder & salt. Whisk well, you want it all evenly together. Cut butter into flour mixture until everything is crumbly & well squished. (I don’t know how to explain this but literally just mush it together until it looks like evenly mixed tiny crumblies, there should be no big lumps of butter it should be well incorporated)

4 beaten eggs

½ tsp salt

1 cup shredded cheese

Approx 2 to 2.5 cups of leftover taco meat

Mix eggs, salt, cheese, & meat together in separate bowl from the flour mixture until everything is blended nicely. Add taco meat mixture to the flour mixture. Mix until it’s well together (no dry spots & a little sticky.)

Put in sprayed/greased muffin tin. Makes 12 muffins so just distribute it accordingly. It’s dense, the tin will look full (remember to trust the floof) DO NOT pack it, just plop it in there loosely.

Bake for 25 minutes at 350 degrees Celsius.

Let cool 10 minutes, remove from tin.

Eat warm. These are good for the day of baking & the next day. To reheat just pop in microwave for 10-15 seconds.

Kielbasa and Cheddar Potato Delight

This hearty soup combines savory kielbasa with creamy potatoes and cheddar cheese, creating a comforting dish perfect for any occasion.

Ingredients
1 tablespoon olive oil
300 g (10.5 oz) kielbasa sausage, cut into bite-size pieces
1 medium onion, diced
1 medium carrot, diced
2 celery ribs, diced
4 garlic cloves, finely chopped
½ teaspoon red chilli flakes
750 g (1 ½ lb) potatoes, peeled and cubed
1.25 litres (5 cups) chicken stock
300 ml (1 ¼) full-fat milk
100 g (3.5 oz) cheddar cheese, grated
30 g (½ cup) fresh parsley, roughly chopped
Salt and pepper to taste

Instructions
Heat the oil in a large pot or Dutch oven and fry the kielbasa for 4-5 minutes over medium heat until slightly crispy. Remove the sausage with a slotted spoon and set it aside.
Add the onion, carrot, and celery to the same oil you cooked the kielbasa in and cook for 5 minutes until softened.
Stir in the garlic and red chilli flakes and continue to cook for another minute until fragrant.
Add the potatoes and chicken stock to the pot and bring to a boil. Lower the heat and simmer for 10-12 minutes, covered with a lid, until the potatoes are fork-tender.
Take a ladle of soup and mix it with the milk in a measuring jug or bowl to temper it. Pour the mixture into the pot, then add the cooked kielbasa.
Add the cheddar cheese and stir until completely melted.
Simmer the soup for 2-3 more minutes until it thickens some more, then stir in the parsley. Season to taste, then divide into bowls and serve with extra grated cheddar on top if you like.
