Watermelon Cayenne Cooler

It’s no secret that a ripe watermelon is only seconds away from becoming an amazing summer libation.  Watermelon + blender = fruit juice of dreams.  What you might not know is that watermelon is one of the most alkaline forming fruits out there.  Eating foods high on the alkaline scale will help to keep your energy levels up and your body functioning optimally.  

Late night out?  Too many margaritas around the bonfire?  Jet lag got you down?  Give this one a shot.  

Watermelon Cayenne Cooler (makes 2 servings)

  • 2 cups of fresh watermelon juice (alkaline forming, helps to fight disease)
  • 1 TBS fresh lemon juice (boosts energy & vitality)
  • 1/16 tsp to 1/8 tsp (or less) cayenne pepper (great for circulation & pain relief)

Cut up a watermelon and discard the rind.  Place watermelon into a blender and blend on high.  Transfer the juice to a container.  Measure out 2 cups of juice and return to the blender.  Add lemon juice and your desired amount of cayenne pepper.  Blend away!  Serve in pretty glasses and add a sprig of basil if you’ve got some handy.  

*Watermelon juice can be a little too sweet for some.  Don’t fret.  Mix in a bit of water and you’ll be good to go.  

**¼ of a large watermelon makes about 4 cups of juice.

Deconstructed Mexican Street Corn

Deconstructed Mexican Street Corn 

(makes about 3 servings)

  •  4 ears of corn (great source of fiber)
  • ¼ cup chopped cilantro (removes toxic metals from the body)
  • 3 tsp fresh lime juice (lowers uric acid)
  • 3/8 tsp celtic or Himalayan sea salt (wonderful for the nervous system)
  • ½ tsp chili powder (great source of Vitamin A)
  • 3/8 tsp garlic powder (antibacterial)
  • 2 tsp nutritional yeast (helps to convert food into energy)
  • 1-2 dashes of cayenne pepper, for additional heat (optional) (great for circulation)

First, shuck your corn.  Why is it so much fun to shuck corn?  I honestly find this activity to be very satisfying.  Next, you can either grill your corn, boil it, or choose to eat it raw.  I chose to grill mine to give it a more authentic street corn feel.  Let the grill heat up for at least 5 minutes or so.  Place the ears of corn onto the grill or grill pan and let cook for about 15-20 minutes, rotating the ears throughout.  

Once the corn is cooked, slice off the kernels with a knife and transfer the loose pieces to a bowl.  

Add remaining ingredients to the bowl and mix until combined well.  

That’s it!  Sweet and simple!
